- 4 large organic beets, peeled and mandolined (I used Chioggia beets but any kind work)
- juice from 1/2 lemon
- drizzle olive oil
- 1/4 tsp cumin
- salt and pepper to taste
- Peel, cut off tops and mandolin beets into a large bowl.
- Add lemon juice, olive oil, cumin and stir.
- Add salt and pepper to taste and leave in fridge for 30 minutes or longer and then enjoy over salads or as a side dish.
