Marinated beets

  • 4 large organic beets, peeled and mandolined (I used Chioggia beets but any kind work)
  • juice from 1/2 lemon
  • drizzle olive oil
  • 1/4 tsp cumin
  • salt and pepper to taste


  1. Peel, cut off tops and mandolin beets into a large bowl.
  2. Add lemon juice, olive oil, cumin and stir.
  3. Add salt and pepper to taste and leave in fridge for 30 minutes or longer and then enjoy over salads or as a side dish.
