Red Cabbage and Collard Greens Salad

Ingredients:

  • 1 small head organic red cabbage
  • 1 head organic collard greens, destemmed
  • 2 small organic lemons
  • olive oil
  • salt/pepper

Directions:

  1. With a mandolin, shred red cabbage. Cut collards into strips. Add both into a big bowl.
  2. Add lemon juice and olive oil.
  3. Salt and pepper to taste.
  4. Mix well and enjoy!
