Veggie Soup with Barley

  • 1 tbsp. olive oil
  • 2 sweet onions, diced
  • 10 garlic cloves, chopped
  • 6 organic celery sticks and leaves
  • 8 organic carrots, peeled and diced
  • 12oz package frozen diced organic butternut squash
  • 16oz package frozen organic green beans
  • 3/4 cup barley, rinsed thoroughly
  • 1- 14.5oz can diced tomatoes
  • 1- 32oz vegetable broth
  • 6 cups water
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • salt/pepper to taste


  1. In a large pot, sauté onions in oil for a few minutes until softened. Then add garlic and stir for another few minutes.
  2. Add celery and carrots and cook for about 5 minutes.
  3. Add all other ingredients and bring to a boil and then simmer for about an hour or until all vegetables are softened and barley is cooked.
  4. Add salt and pepper to taste.
  5. Enjoy.
